Save Money With Muffins!

Strawberry Banana Muffins



I always hate throwing away food, now with the rising costs on just about everything I really hate tossing food we bought. One of my favorite tricks to save on food costs is to make sure everything we buy gets used!


My kids love eating muffins, and I love having a snack ready to garb and go. Instead of buying expensive muffins at the store, I use fruit that hasn't gone bad but are past the "perfect" kid consumption stage to make muffins.


I make a variety of muffins but this is one of my kiddos favorites!


Strawberry Banana Muffins


  • 3 bananas mashed

  • 1/2 container of strawberries chopped and mashed (if I don't have strawberries on hand I will use strawberry jam as a substitute)

  • 3/4 cup white sugar

  • 1/3 cup brown sugar

  • 1 egg

  • 1/3 cup butter melted (we used half butter half coconut oil)

  • 1/4 cup sour cream

Mix ingredients above in a bowl, then add:

  • 1 1/2 cup flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

Mix, scoop into paper muffin cups in regular sized muffin pan and bake at 375 degrees fahrenheit for 18-20 minutes, or until a toothpick comes out clean.


Enjoy after cooling or freeze for convenience!


I like to double or even triple this recipe. I will let them cool and place as many as I can fit in a gallon sized Ziploc bag. I place these bags flat in the freezer and when we are ready for them I remove the bag from the freezer and thaw in the refrigerator. They can be microwaved frozen for 20-30 seconds or thawed and eaten chilled.
